La Bête opened its doors on July 20, 2009 on Laurier Boulevard, in the Delta 3 building in Ste-Foy, in Quebec City. As conductors of this culinary orchestra, a passionate and experienced team: Christian Veilleux, Lyne Blackburn, Marc-Olivier Germain and Frédéric Trempe form a quartet of owners dedicated to the delights of their customers, the quality of the La Bête experience and the success of this company.
Born into a family of restaurateurs, Christian discovers this profession as early as 10 years old. Having worked in all positions in the kitchen and in front service, he became responsible of a full team at 19 years. His passion for management, innovation and development earns him an internship in catering direction at the prestigious hotel Le Meurice in Paris for 18 months. In 2004, he opened Versa in the St-Roch neighborhood, his first restaurant, with his life and business partner Lyne Blackburn. The idea of La Bête was born from this adventure and became reality in 2009. Leader born, passionate about quality, he always knew how to surround himself with the best to make La Bête the number 1 Steakhouse in Quebec City.
Trained butcher, Louis worked in independent groceries and butcher shops to join the pack in 2010. Passionate about the quality, processing and aging of beef, this young perfectionist is a bold anticonformist in his butchering experiments.

With an energy and an ease of communication out of the ordinary, Louis makes you enter his universe and takes the time to explain the best cooking method for all cuts. In addition to having worked alongside the greatest chefs of Quebec City, Frédéric Trempe knows how to combine his taste for adventure with his passion for cooking. It is through culinary trips and training abroad that Frédéric has positioned La Bête as a leader in the restaurant and meat aging industry.
In the restaurant and hotel business for more than 25 years, Marco has been working as Associate Director at La Bête for 10 years. Rigorous and unifying, he knows how to choose the best team to support him: his 2 head waiters passionate about wine products and service personalization will offer you a most pleasant experience!
